Sheathe steel or block in cement backer board, then apply a waterproofing membrane before the veneer or stucco, so wind-driven rain cannot soak into the cavity and rust the steel or freeze inside the block. Slope the countertop substrate slightly so water drains off rather than pooling.

The mistakes I see most often are avoidable. Building the frame before confirming appliance cutout dimensions leads to openings that do not fit and expensive rework. Skipping the grill maker’s insulated jacket or clearance to combustibles risks heat damage and voids warranties. Omitting ventilation on a gas island lets propane pool dangerously. Setting the island on a patio or soil that heaves in freeze-thaw cycles cracks the counters and finish, which is why a proper footing matters in cold climates. Finally, using non-galvanized fasteners guarantees rust streaks bleeding through the finish within a couple of seasons.
