Gas Oven Not Getting Hot Enough: Complete Guide for Homeowners

A gas oven that struggles to hit 350°F turns Sunday roast into a four-hour gamble. Nine times out of ten, a gas oven not getting hot enough traces back to one of three components: a weak ignitor, a fouled gas regulator, or a thermostat sensor reading 50°F low. The good news is two of those repairs are well under $50 in parts, and the diagnosis takes 20 minutes with a multimeter and an oven thermometer.

Confirm There Is Actually a Temperature Problem

Before chasing a fix, verify the issue. Hang a Taylor or CDN dial oven thermometer from the center rack and set the oven to 350°F. Wait 25 minutes for full preheat plus stabilization. A healthy oven holds within 25°F of the setpoint. If the thermometer reads 280°F when the dial says 350°F, you have a real calibration or heating problem. If it reads 340°F, the oven is fine and the cookware or recipe is the variable.

Test at three setpoints (250°F, 350°F, 425°F) because some failures only show up at the high end of the range when the burner cannot keep up.

Inspect the Glow-Bar Ignitor

The hot-surface ignitor is the most common failure point on modern gas ovens from Whirlpool, GE, Frigidaire, and Samsung. It serves two jobs: it glows red-hot to light the gas, and the current it draws tells the gas safety valve to open. As ignitors age, resistance climbs and current drops. The valve still opens partially, but the flame is weak and the oven crawls to temperature.

Pull the bottom oven floor panel and watch the ignitor through the preheat cycle. A healthy ignitor glows bright orange within 60 to 90 seconds. A dim red or slow-warming glow means it is on its way out. Replacements run $25 to $55 for a Norton 41-413 or a GE WB13K21 and take 15 minutes with a nut driver. Replace ignitors as a pair if you have a separate broil ignitor.

Check the Oven Temperature Sensor

The temperature sensor is a thin metal probe protruding into the upper rear of the oven cavity. It is a resistance temperature detector that reads roughly 1,080 ohms at 75°F. Pull the back panel, disconnect the sensor harness, and measure resistance with a multimeter. A reading more than 50 ohms off at room temperature, or any open-circuit reading, means the sensor is bad.

Replacement sensors are $20 to $40 and swap in with a single screw and a Molex connector. After installing, run the calibration mode in the control panel. Owner’s manuals walk through the sequence, usually Bake plus a setpoint dial within 5 seconds of powering up.

Verify Gas Supply Pressure

Inadequate gas pressure starves the burner. Natural gas appliances want 3.5 to 4 inches of water column at the regulator. Propane wants 10 to 11 inches WC. A manometer reading at the appliance shutoff confirms supply. If pressure is low, the issue is upstream: a partially closed shutoff valve, a kinked flex line, a clogged inlet screen, or in propane systems, an empty tank or undersized regulator.

Anyone uncomfortable working with gas should call a licensed plumber or gas fitter for this test. The IFGC requires a licensed professional for any work past the appliance shutoff in most jurisdictions, and CSST flex line work requires bonding compliance.

Clean the Burner Ports and Combustion Air Path

Carbon buildup and spilled food block burner ports and starve the flame of air, producing a yellow lazy flame that cannot transfer heat efficiently. Pull the burner tube from the orifice end, wipe it down, and clear each port with a sewing needle. A healthy gas oven flame is steady blue with a small yellow tip at the top.

Vacuum the convection fan grille and the combustion air intake at the back of the cavity. Restricted airflow trims BTU output by 15 to 25 percent. While you have the back panel off, check the convection fan motor on European brands like Bosch, Bertazzoni, or Miele, where seized fans show up as slow preheat times more often than burner issues.

Recalibrate or Replace the Thermostat

Mechanical thermostat ovens (common on older Maytag, Magic Chef, and entry-level Hotpoint units) drift over time. The dial setpoint slides 25 to 75°F off true temperature. Most thermostats have a small calibration screw on the back of the knob shaft. Pull the knob, locate the adjustment slot, and turn it 1/8 turn at a time toward Higher. Each click corresponds to about 10°F.

If the thermostat will not hold calibration, replace it. Aftermarket Robertshaw thermostats fit most legacy ovens for $45 to $85. Modern electronic boards do not adjust mechanically; they rely on the sensor calibration covered earlier or a service-mode offset programmed at the panel.

When the Fix Is Bigger Than a Part Swap

If the ignitor, sensor, and gas pressure all check out and the oven still underperforms, the safety valve may be sticking. Safety valves run $90 to $160 and require careful gas-line work, which puts it in licensed-pro territory. Same goes for cracked porcelain liners, warped burner tubes, or a failed control board on a 15-year-old range.
