The standard rule is straightforward: all flooring in food prep areas must be smooth, durable, nonabsorbent, and easily cleanable. Health Code Flooring Requirements

The FDA Food Code (adopted by most state and local health departments) specifies that flooring in food preparation, storage, and service areas must be:

  • Smooth: No cracks, crevices, or rough textures where bacteria, grease, and food particles can accumulate
  • Durable: Must withstand heavy foot traffic, rolling equipment, dropped items, chemical cleaners, and constant moisture
  • Nonabsorbent: Must not absorb water, grease, food acids, or cleaning chemicals. Porous materials are prohibited.

Materials that do NOT meet food prep area requirements include carpet, untreated wood, unsealed concrete, and any porous or textured material that cannot be thoroughly sanitized.

Approved Flooring Materials

Quarry Tile

The most traditional commercial kitchen flooring. Quarry tile is an unglazed ceramic tile made from natural clay, fired at high temperatures. It’s extremely durable, slip-resistant when wet (due to its slightly textured surface), and resistant to grease, chemicals, and extreme temperatures. Standard size is 6×6 inches with 1/2-inch grout joints.

  • Pros: Proven track record, excellent slip resistance, heat resistant, very durable
  • Cons: Hard on workers’ feet and legs, grout lines require maintenance, can crack from impact
  • Cost: $5 to $12 per square foot installed

Epoxy Flooring

Epoxy flooring systems create seamless, nonporous surfaces that are ideal for food prep areas. Commercial kitchen epoxy is typically applied as a multi-coat system over concrete, creating a monolithic surface with no grout lines or seams where bacteria can hide.

  • Pros: Seamless (no grout), extremely easy to clean, chemical resistant, customizable (colors, textures), can include anti-slip aggregates
  • Cons: Requires professional installation, surface prep is critical, can be slippery without anti-slip additive

Commercial Sheet Vinyl

Heavy-duty sheet vinyl designed for commercial kitchens. Installed in large rolls (6 to 12 feet wide) with heat-welded seams that create a watertight, seamless surface. The smooth, nonporous surface resists bacteria, chemicals, and moisture.

  • Pros: Seamless when properly welded, comfortable underfoot, affordable, easy to clean, good slip resistance
  • Cons: Can be punctured by heavy dropped objects, shorter lifespan than tile or epoxy, requires professional heat welding
  • Cost: $3 to $8 per square foot installed

Sealed/Polished Concrete

Properly sealed concrete meets food prep requirements when the surface is nonporous and smooth. Polished concrete with a penetrating sealer creates a durable, cleanable surface. However, concrete must be maintained — resealing every 1 to 3 years is essential to maintain the nonabsorbent requirement.

  • Pros: Extremely durable, low cost if existing slab is in good condition, easy to clean when sealed
  • Cons: Hard on feet, cold, requires regular resealing, can crack
  • Cost: $3 to $10 per square foot (polishing and sealing)

Porcelain Tile

Dense, low-absorption porcelain tile with slip-resistant finishes meets food prep requirements. Use tiles rated for commercial foot traffic (PEI 4 or 5) with epoxy grout to create a waterproof, sanitary surface.

  • Pros: Very durable, many design options, heat resistant, easy to clean
  • Cons: Grout lines need epoxy grout and maintenance, hard underfoot, can crack
  • Cost: $8 to $18 per square foot installed with epoxy grout

Slip Resistance Requirements

OSHA and local building codes require slip-resistant flooring in areas where water, grease, and food are present. Key standards:

  • DCOF (Dynamic Coefficient of Friction): Minimum 0.42 for wet surfaces per ANSI A326.3. Higher is better for kitchens.
  • ADA compliance: Americans with Disabilities Act requires slip-resistant surfaces in commercial settings.
  • Anti-slip treatments: Quarry tile is naturally slip-resistant. Epoxy and concrete require anti-slip aggregates (aluminum oxide, quartz sand) broadcast into the topcoat.

Drainage Considerations

Commercial kitchen floors must slope toward floor drains to prevent standing water. Standard slope is 1/8 inch per foot toward drains. Floor drains must be:

  • Accessible for cleaning
  • Equipped with proper traps to prevent sewer gas backup
  • Sized for the volume of water used in the operation
  • Covered with grates that are easy to remove and clean
